This is the time when the baby is growing and not only growing it is developing and yes, this is the time you can mould the baby into anything you want. There is a difference between gluten intolerance and celiac disease, Do Not Confuse Them! Celiac disease is a way more gruesome reality for the little one, while Gluten Intolerance signs include:

Never put your child on a gluten-free diet, instead start from the scratch. Make it habituated of those that are necessary because this is the time it can change and develop accordingly. Make it at real from the scratch and not the processed food. This helps avoid the extra and the harmful gluten from entering your baby’s body and having a bad effect like mentioned above. Your work does not finish here parents; you need to do a little bit more to make sure there are no issues with your baby’s digestive system. 

Prepare the gluten foods properly before serving your little one. First of all properly soak, sprout or sour them. This will help gluten turn into more digestible form and with time if it suits you can keep increasing it to make your baby fully immune to the like food with gluten.
